Caprese-inspired Bruschetta

Thanks to challenger Brooke-Randolph for sharing her recipe for this twist on bruschetta.

1. chopped and softened onion on the stovetop with fresh garlic

2. chopped tomato

3. tore basil leaves & mixed with tomato

4. added onion to tomato & basil

5. tossed veggies with balsamic vinegarette

6. let mozzarella slices sit in balsamic vinegarette during prep

7. cut whole wheat thick french bread into slices, lightly brushed with melted butter

8. toasted bread under broiler, flipped and set mozzarella slices on top of bread

9. melted mozzarella under broiler

10. added veggie mix to top
