One Pot Party Pasta

Easy prep and easy clean-up, that’s what challenger 2BHealthy offers with this delicious pasta dish.

This is an easy recipe for a healthy dinner your family will love:

1 lb of turkey smoked sausage sliced in 1/8 slices.

1 box of multi grain penne pasta.

1 bunch of broccoli Rabe (you can substitute broccoli).

1 28oz can fire roasted diced tomatoes.

1 large onion chopped.

3 to 4 cloves garlic.

1/2 c. low sodium chicken broth.

1/2 c chopped Italian parsley.

salt, pepper to taste.

1 tsp. smoked paprika

1 tsp. cumin.

Rinse broccoli Rabe chop, place in pot of boiling water for 3 to 5 minutes. (this pulls the bitterness from the greens) drain set aside. Boil water cook pasta according to directions. In a large sautee pan, heat oil on med. heat sweat onion, then add garlic and sausage for about 4 minutes. Add tomatoes heat through. By now pasta is ready to be drained, set aside. Add broccoli Rabe and spices. Mix well add chicken broth more may be needed too create sauce. Add pasta mix well. Adjust seasoning to taste. Sprinkle parsley on top. (Grated Romano cheese may be used on top)

Serves 6 to 8.
