Healthy Summer Sandwiches
Of all of the recipes we prepared for our summer sandwich spread, this one got the most OOOs and AHHHs! We think you'll like it, too, as just three ingredients can make you feel like you're summering in Greece! Serve it cold or warm off the panini press and you've got a light lunch perfect for a sunny afternoon on the patio or by the pool.
Make This Sandwich
We used an Orowheat whole grain sandwich round layered with roasted red bell peppers, slices of whole olives, and just enough fat-free feta crumbles.
Make It Healthier
Add roasted tomatoes for the taste and nutrition of another juicy vegetable. For more flavor without calories, add a splash of balsamic vinegar.
