Healthy Summer Sandwiches

This sandwich could almost be entirely homemade if you have your own vegetable garden. Whether using store-bought or a homemade hummus you can top it with grated carrots and slices of crisp cucumbers right out of your own backyard. If you're baking your own bread too, then you've pretty much found the perfect summer sandwich.

If you need to switch-up the kids' PBJ routine, let them choose which vegetables to add to their hummus and sandwich round. It's simple enough that they could make their own!

Make This Sandwich

On a sandwich round (or your choice of bread), spread garlic roasted hummus and then add freshly sliced cucumbers and a generous amount of grated carrots.

Make It Healthier
