Healthy Summer Sandwiches

This sandwich was another group favorite at our tasting! It packs perfectly for brown bagging or picnicking and may even appeal to the kids. If not, it will certainly appeal to those who like big flavor in a vegetarian sandwich. Instead of the usual potato chips on the side, pair this one with tortilla chips and guacamole!

Make This Sandwich

On a sandwich round (or bread of choice) spread your choice of spicy or mild black bean dip. Then, add a slice of reduced-fat colby-Jack cheese and top with slices of cool banana peppers.

Make It Healthier

Creamy slices of avocado (or a dollop of guacamole) would certainly go well with this sandwich. And if you don't want to go meatless, a few thin slices of roasted chicken breast would finish it.
