Healthy Summer Sandwiches

Hummus is such a satisfying and healthy protein that we had to sneak it in to our sandwiches. However, there isn't anything sneaky about the bold flavor of roasted red pepper hummus, especially when served with red onions. You'll want a mint after this one, but that shouldn't stop you from enjoying one of the best vegetarian sandwiches you've had in a while.

Make This Sandwich

Spread roasted red pepper hummus across a slice of whole grain bread. Add a layer of fresh sprouts and then top with thin slices of red onion. Finish with the second slice of bread.

Make It Healthier

Add more green (and a little crunch) with fresh spinach leaves.
