Healthy Summer Sandwiches

A chicken salad sandwich is fine, but it's something special when you dress it up with just a few extra ingredients. Adding a bed of baby spinach and topping with avocado slices adds even more nutrition to this lunch, while serving on a mini croissant makes it feel fancy, even if you're in your cube.

Make This Sandwich

Place a layer of baby spinach on one half of a split mini croissant (or choice of bread). Spoon your favorite chicken salad recipe on top of the spinach and then add slices of half an avocado.

Make It Healthier

Skip the mayo and make your chicken salad with plain 0% fat Greek yogurt or mashed avocado.
