Cornbread Dressing

Suitable for Diabetics! Traditional and easy, like grandmother used to make.

Exchange: 1 bread and 1/2 fat.
Cornbread Dressing Photo
Yield: Serves 8 (3/4 cup per serving)

Ingredients

  • 3 c. crumbled cornbread
  • 1 c. whole grain bread crumbs
  • 2 c. fat free chicken broth
  • 1 c. celery finely chopped
  • 3/4 c. onion, finely chopped
  • 2 egg whites
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. poultry seasoning

Instructions

  1. Combine all ingredients in mixing bowl; mix well
  2. Turn into non-stick dish
  3. Bake at 350 degrees for 45 minutes or until light brown and "set".
  4. For a professional touch:  Saute celery and onion in chicken stock and water before adding to dry ingredients. 
  5. Add sauteed spinach or chopped broccoli for added fiber and nutrients.
  6. Missing the sausage? Try adding chopped mushrooms.
