Chocolate Cake

Cake fit for company.

Nutrition Facts: Carbohydrates 10.5g

Yield: Serves 6

Ingredients

  • 6 Tbs. butter
  • 4 oz. unsweetened chocolate
  • 1/3 cup light cream
  • 1/3 cup strawberry all fruit jam
  • 1 tsp. espresso powder
  • 2 Tbs. Splenda
  • 3 large eggs
  • 1 tsp. vanilla
  • 1 cup Splenda
  • 1/8 tsp. cream of tartar
  • 1/4 cup flour
  • 1/8 tsp. salt

Instructions

  1. Preheat oven to 350F
  2. Grease cake pan & dust with cocoa powder
  3. Set aside
  4. Combine butter, chocolate, cream, jam, and espresso powder
  5. Melt in a double boiler on low heat (or in microwave, 2-3 minutes in a microwave-safe dish
  6. Let cool
  7. Separate eggs
  8. Combine flour & salt
  9. Set aside
  10. Add sugar, egg yolks, and vanilla to chocolate mix
  11. Add sweetener & blend until smooth
  12. In another bowl, beat egg whites until foamy
  13. Add cream of tartar and beta into stiff peaks
  14. Fold in cooled chocolate mix
  15. Pour into prepared pan
  16. Bake 18-20 minutes or until toothpick comes out clean
  17. Cool
  18. Refrigerate 1-2 hours
  19. Serve with whipped cream & strawberries
  20. Chocolate frosting, optional
