Cheesy Enchiladas

Cheesy Enchiladas perfect for a family dinner.

Yield: Serves 6

Ingredients

  • 1- 8oz. package fat-free cream cheese, softened
  • 1- 8oz. package fat-free shredded cheddar cheese
  • 1/4 cup sliced green onions
  • 6- 6 inch flour tortillas
  • 1 cup thick n' chunky salsa

Instructions

  1. Preheat oven to 350 degrees F
  2. Coat pan with cooking spray
  3. Beat cream cheese with electric mixer on medium speed until smooth
  4. Add 1 cup of cheddar cheese and onions, mixing until blended
  5. Spread 1/4 cup cream cheese mixture down center of tortilla, roll and place seam side down in 11 x 7-inch baking dish
  6. Repeat for each tortilla
  7. Pour salsa over tortillas
  8. Sprinkle with remaining cheese
  9. Cover with foil
  10. Bake for 25 minutes or until thoroughly heated

Add some guacamole or sliced avocado for some healthy fat that adds some flavour too
