Better Than Mashed Potatoes

Chef Rocco Dispirito saves fat and calories by subbing cauliflower for potatoes in this tasty side.

Yield: Serves 4

Ingredients

  • Nonstick cooking spray
  • 2½ cups roughly chopped cauliflower
  • Salt and freshly ground black pepper
  • ½ cup Greek yogurt

Instructions

  1. Preheat the oven to 450˚F. Line a baking sheet with foil and spray it with cooking spray.

  2. Spread the cauliflower out on the prepared baking sheet. Season it with salt and pepper to taste. Top the cauliflower with another sheet of foil, and roll up the edges to form a sealed package.

  3. Roast the cauliflower for 20 minutes. Remove the top foil, being careful of the steam, and continue roasting the cauliflower until it is tender, another 15 to 20 minutes.

  4. In the bowl of a food processor, combine the cauliflower with the yogurt. Puree until the mixture is smooth. Season with salt and pepper to taste, if desired, and serve.

What does roughly "chopped" mean? Can I steam the cauliflower instead? What does "roughly chopped" mean? How big are the pieces, eg. approx 1 inch cubes? I've tried 450 degrees and the cauliflower is done and turning brown at 20 minutes with the approx 1 inch pieces. No way could I roast them another 15-20 minutes. Can I just steam the cauliflower instead?

very good. I make Cauli-taters all the time and my kids like them better than plain mashed potatoes. I steam the cauliflower and add skim milk , light butter and season to taste.At first I made half potato half cauliflower until eventually I omitted potatoes.
