Bacon Breakfast Pie

All the major breakfast elements in one shot.

Nutrition Facts: Carbohydrates 3.5g

Yield: Serves 2

Ingredients

  • 1/2 cup shredded cheese
  • 1 tomato, sliced
  • 3 whole eggs
  • 1/8 cup cream
  • 1/8 cup water
  • salt and pepper to taste
  • 4 slices bacon

Instructions

  1. Preheat oven to 450º F
  2. Spray casserole dish with cooking oil
  3. Layer tomato slices over the bottom
  4. Beat eggs with cream and water
  5. Beat until foamy
  6. Stir in salt and pepper
  7. Pour over tomatoes
  8. Put in oven for 15 - 20 minutes
  9. While eggs bake, cook bacon
  10. Spray skillet with cooking spray
  11. Cook on medium high heat
  12. When bacon is crisp, break up bacon
  13. Remove egg from oven
  14. Spoon off any excess tomato juice
  15. Sprinkle bacon on top and serve
