Pensiero outlines two basic steps to follow as you embark on this new eating plan.

The Real-Food Diet is a Mediterranean and vegetarian based eating plan that was born out of Pensiero's passion for health and good food. There are six basic rules to follow for the Real-Food Diet. They are:

  • 1) Start out small.
  • 2) Go local and choose fresh foods according to their seasonality.
  • 3) Visit a farmer's market and start buying your produce from there.
  • 4) Experiment with different vegetables, fruits and grains.
  • 5) Learn the story behind your food: Where did it come from, who harvested it, etc.
  • 6) Plant a garden.

Recipes for the Real-Food Diet meals come from Pensiero's Hudson Valley Mediterranean cookbook.

For breakfast, you might eat a hard-boiled egg with whole wheat toast. Lunch might be a Hudson Valley Club Sandwich, and dinner might be mixed risotto with squash, tomatoes and basil and fresh berries for dessert.
