Zucchini Hashbrowns

Hashbrowns without the carbs.

Yield: Serves 4


  • 2 Tbsp. olive oil
  • 2 cups shredded zucchini
  • 1/4 tsp salt
  • 2 eggs
  • 4 Tbs. Parmesan cheese


  1. Combine zucchini with salt
  2. Let stand for 15 minutes
  3. Absorb excess moisture with paper towels
  4. Combine zucchini with eggs and cheese
  5. Make small flat patties with batter
  6. Heat oil in a skillet
  7. Cook patties, turning once, until golden on both sides
