Ripe tomatoes blend well with balsamic vinegar, onion and sweet peppers in this warm veggie side dish.
3 medium ripe tomatoes, core and dice
1/4 cup scallion, slice thin
1 green bell pepper, remove seeds, core and dice
1 tablespoon cilantro, chopped
2 tablespoons balsamic vinegar
Toss all ingredients together and place into microwaveable container. Microwave on high for 2 minutes, stir and serve warm.
