Veggie Burgers
Even vegetarians can enjoy a good burger.
Yield: Serves 4
Ingredients
- 1 Tbs. canola oil, divided
- 1/4 cup each minced onion, green pepper, carrot, celery
- 2/3 cup drained canned white kidney (cannellini) beans
- 1 egg, lightly beaten
- 1/3 cup seasoned dried bread crumbs
- Top with cheddar cheese if desired*

Instructions
- In 8-inch nonstick skillet, heat 1 tsp. of the oil
- Add onion, pepper, carrot, celery and cook over medium heat, stirring occasionally, until veggies are soft and moisture has evaporated
- Set aside to cool
- Using a fork, in medium mixing bowl mash beans
- Stir in egg
- Add bread crumbs and veggies
- Mix until thoroughly combined
- Shape mixture into 4 equal patties
- Set patties on plate and refrigerate covered, 20 minutes
- In same skillet, heat 1 tsp. of the remaining oil
- Add 2 patties and cook over medium heat, turning once, until browned on both sides
- Repeat with remaining oil and patties

Is there a way to make this recipe vegan? Also all oil has the same amount of calories. The only difference is if the fat is heart clogging or not.

Excellent receipe. Every time I make these I am asked for the receipe. The real taste test was when my daughter requested to have the burgers again.

veggie burgers really aren't as bad as everyone thinks. throw it on the grill and put all the fixin's on it and you'd really never know the differents.
