Vegetable Beef Soup

A classic favorite soup recipe.

Yield: Serves 4


  • 3 lbs. beef, cut into bit sized pieces
  • 1 garlic clove diced
  • 1/2 celery rib, diced
  • 3 Tbs. olive oil
  • 3 cups beef broth
  • 1 cup water
  • 1/4 cup red wine
  • 1- 14 oz. can diced tomatoes, with juice
  • salt and pepper to taste
  • 1 cup cauliflower
  • 1/2 cup shredded zucchini


  1. Heat oil in a large pot
  2. Add beef, garlic and celery
  3. Cook until meat is browned on all sides and onions are translucent
  4. Add the broth, water, tomato, wine and spices
  5. Bring to a boil, then cover and reduce to low heat
  6. Let simmer gently for 1 hour, stirring occasionally
  7. Add cauliflower and zucchini
  8. Bring back to a boil, cover, turn down the heat, and cook until heated through
