Vanilla Almond Mousse

Vanilla and Almond meet in a soft wonderful treat.

Yield: Serves 4


  • 2 egg whites
  • 1/4 cup Splenda
  • 1 1/2 cup cream
  • 1/2 cup water
  • 2 tsp. vanilla
  • 2 tsp. almond extract


  1. Beat two egg whites to soft peaks
  2. Gradually beat in 2 Tbs. of Splenda
  3. Continue to beat to still peaks and set aside
  4. Whip cream until frothy
  5. Gradually beat in remaining Splenda until stiff
  6. Add vanilla and almond extract
  7. Mix well
  8. Divide equally among individual cups
  9. Cover and freeze
