Tarragon Marinated Cauliflower

Tarragon enhances the flavor of cauliflower. You can serve this dish warm or chilled.

1 head cauliflower, trimmed and washed
1 tsp fresh tarragon or 1/2 tsp dried tarragon
2 Tbsp red wine or cider vinegar
1 tsp olive oil
2 Tbsp water

Combine all ingredients together in medium sized bowl. Marinate briefly or overnight. Place in microwave container and cover. Microwave on high until cauliflower is tender, about 6 to 8 minutes. Stir well. Serve hot or chill and serve as a salad.
