This is a great way to eat a veggie burger. The corn tortillas are crunchy and add variety and fiber over the plain old hamburger bun.
4 nonfat veggie burgers
8 corn tortillas
4 cups dark green lettuce, washed, dried and shredded
2 tomatoes, diced
1/2 cup sliced green onion
4 tablespoons prepared salsa
Preheat oven to 375º.
Place corn tortillas on cookie sheets in a single layer and allow to brown and become crisp (a toaster oven also works well for this).
Meanwhile heat veggie burgers in microwave (about 1 minute per burger).
Sandwich each veggie burger between 2 toasted corn tortillas topped with lettuce, tomato, green onion and salsa.
