Stuffed Eggplant
Eggplant stuffed with spices and turkey that will make your taste buds sing.
Yield: Serves 4
Ingredients
- 1 eggplant
- 1 tsp. chili powder
- 1 garlic clove, minced
- 1 tsp. salt
- 1/2 cup tomato, chopped
- 1 pound ground turkey
- 1 red bell pepper, chopped
- 1 Tbsp. olive oil
- 1 Tbs. fresh cilantro
Instructions
- Preheat oven to 350º F
- Cut eggplant in half and cut out flesh
- Place eggplant shells in greased casserole dish
- In skillet, heat oil
- Add garlic, chili powder and salt
- Add tomato and cook for 5 minutes
- Add ground meat to skillet and cook for 10 more minutes
- Add bell pepper and cook a few more minutes
- Spoon the meat mixture into the eggplant shells and brush edges with oil
- Bake at 350º F for 20-25 minutes
