Southwestern Salad with Cilantro Lime Vinaigrette

A fresh salad that just screams the flavors of Summer.

Southwestern Salad with Cilantro Lime Vinaigrette Photo
Yield: Serves 2



  • 4 cups mixed greens (choice of spring greens, spinach, romaine, etc.)
  • 1 cup black beans (if canned, rinse juice)
  • 1/2 cup frozen sweet corn, thawed
  • 1 roma tomato, chopped
  • 1/2 red bell pepper, chopped
  • 1 avocado, sliced
  • 1 grilled chicken breast (optional)

Cilantro Lime Vinaigrette

  • 2 Tbsp. olive oil
  • 1 lime, juiced
  • 1 small handful fresh cilantro
  • 1 tsp. cumin
  • pinch kosher salt



  1. Rinse vegetables and chop
  2. Combine ingredients together in large bowl, toss, and then divide between two plates
  3. Top salad with sliced avocados and chicken (if desired)


  1. In a blender combine all ingredients
  2. Mix on "liquify" for about 20 seconds
  3. Pour across both salads
