Southwest Quiche

A low-carb quiche with bold flavor.

Yield: Serves 4


  • 8 whole eggs
  • 1/2 cup heavy cream
  • 1/2 cup water
  • 1/4 cup green onions
  • 1 Tbs. chili powder
  • 1 tsp. cumin
  • 2 cups cooked chicken, cut in bite sized pieces
  • 1 cup shredded cheese
  • 1/2 cup fresh or frozen spinach


  1. Preheat oven 350º F
  2. Beat eggs
  3. Fold in remaining ingredients
  4. Pour into glass casserole dish (sprayed with cooking oil)
  5. Bake for 45 minutes-1 hour
