Southwest Quiche
A low-carb quiche with bold flavor.
Yield: Serves 4
Ingredients
- 8 whole eggs
- 1/2 cup heavy cream
- 1/2 cup water
- 1/4 cup green onions
- 1 Tbs. chili powder
- 1 tsp. cumin
- 2 cups cooked chicken, cut in bite sized pieces
- 1 cup shredded cheese
- 1/2 cup fresh or frozen spinach
Instructions
- Preheat oven 350º F
- Beat eggs
- Fold in remaining ingredients
- Pour into glass casserole dish (sprayed with cooking oil)
- Bake for 45 minutes-1 hour
