This sauce tastes like it has sausage in it because of the spices and seasoning used.
2 cups carrots, peeled and thin-sliced
1 cup chopped onions
2 tsp minced garlic
1 tsp dried oregano
1/2 tsp caraway seeds, crushed
1/2 tsp anise seeds, crushed
1/10 teaspoon pinch cayenne pepper
3 15-ounce cans diced tomatoes
1 6-ounce can tomato paste
Generously spray a large shallow pan with olive oil cooking spray and heat over medium-high heat. Saute the carrots, onions and garlic until golden brown, about 3 minutes. Add the seasonings, canned tomatoes with their juice and tomato paste.
Bring to a boil then lower to a simmer. Cook until the carrots are tender, about 10 minutes. Stir occasionally.
Serve this sauce over pasta.
