Sausage in Gravy

Low-carb smoked sausage and gravy.

Yield: Serves 4


  • 1 1/2 pounds smoked sausage, cut into pieces
  • 6 1/2 cups beef broth
  • 1/4 cup chopped celery
  • 1/4 cup green peppers, chopped
  • 1 clove garlic, minced
  • 2 Tbs. tomato sauce
  • 4 Tbs. parsley
  • 1/3 cup green onions, diced
  • 1 tsp. cayenne pepper
  • Butter


  1. Melt butter in large skillet
  2. Add sausage, cover, and cook without stirring about 10 minutes
  3. Add 3/4 cup of stock and scrape bottom
  4. Add salt and pepper
  5. Cover and cook 2 minutes
  6. Add celery, green peppers and garlic
  7. Cover and cook 3 minutes, scraping bottom of pan
  8. Add tomato sauce and cook uncovered 10 minutes, scraping occasionally
  9. Add parsley and green onions
  10. Add 3 1/4 cups more stock and scrape
  11. Cook 20 minutes until liquid is thick dark red gravy
  12. Stir occasionally
  13. Stir in remaining stock
  14. Bring to boil, reduce heat, and simmer, stirring frequently, about 14 minutes, until gravy is right consistency
  15. Remove from heat and serve immediately
