Rocky Road Brownies
You'll want to sink your teeth into this gooey chocolate favorite.
Yield: Serves 8
Ingredients
- 4 egg whites, whipped
- 1/2 cup granulated sugar
- 1 Tbs. vanilla extract
- 1/2 cup cocoa powder, sifted
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup all-purpose flour
- 1 cup marshmallow creme
Instructions
- Preheat oven at 325 degrees F
- Prepare a 9 x 13-inch pan with cooking spray and flour
- In a mixing bowl, combine baking powder, cocoa, salt and flour
- In another mixing bowl, combine egg whites, sugar, vanilla extract and marshmallow creme
- Mix dry ingredients with wet ingredients
- Bake for 18 minutes

This is a great recipe! My mom and I needed a sweet treat... and this was perfect! We modified the recipe a bit... we used Splenda instead of sugar and we used Dark cocoa. We made it in a 8x8 pan. We cooked it for 22 minutes... which next time we will set the timer for 15 minutes and check it after that. It was cooked... just a little too long. Now we just need to find a healthy "frosting" for the top of it! YUM!
