Roasted Pork Tenderloin with Pineapple Chipotle Sauce
Juicy tenderloin marinated in an exciting blend of flavors.
Yield: Serves 6
Ingredients
- 2 cups pineapple juice
- 1/2 cup white wine vinegar
- 2 Tbs. chipotle chiles, finely chopped
- 2 Tbs. lime juice
- 2 Tbs. fresh oregano, chopped, or 2 teaspoons dried
- Freshly ground black pepper, to taste
- 2 tsp. kosher salt
- 1 Tbs. coarsely ground black pepper
- 2 Tbs. chili powåder
- 24 oz. pork tenderloin
- 1 tsp. olive oil
Instructions
- Combine first 3 ingredients in saucepan
- Simmer until mixture is thick enough to coat back of spoon (30 to 40 minutes) stirring often
- Remove from heat and add lime juice, oregano and pepper to taste
- Preheat oven to 400 degrees F
- In small bowl combine salt, pepper and chili powder
- Rub tenderloins with mixture
- Heat oil in saute pan until hot
- Brown tenderloins
- Transfer pan to oven and roast meat until internal temperature reaches 160 degrees F (about 12 minutes)
- Remove from oven, allow to rest for 5 minutes
- Carve and serve with sauce
