Raspberry Brulee

Fresh raspberries give this brulee a flavor that pops.

Yield: Serves 8


  • 2 cups heavy cream
  • 1 Tbs. cornstarch
  • 1/2 cup Splenda
  • 2 egg whites, lightly beaten
  • 1 tsp. vanilla
  • 4 oz. cream cheese
  • 1/2 cup fresh raspberries


  1. Combine cream & cornstarch in double boiler until completely dissolved
  2. Add Splenda & egg whites
  3. Mix well
  4. Place double boiler over simmering water & cook, stirring constantly, until thickens
  5. Remove from heat and stir in vanilla
  6. Add cream cheese & stir until mixture is smooth
  7. Fold in raspberries & divide among 8 ramekins
  8. Cover & chill for 2 hours
  9. Broil until top browns
  10. Serve
