Puffy Omelet with Cheese Sauce

An oven omelet with a great cheese sauce.

Nutrition Facts: Carbohydrates 1.6g
Yield: Serves 2


  • 4 eggs, separated
  • 2 Tbs. water
  • salt and pepper
  • 1 Tbs. butter
  • 1/3 cup cream
  • 1/3 cup water
  • 1/3 cup shredded cheese


  1. Beat egg whites until frothy
  2. Add 2 Tbs. water and continue beating until stiff
  3. Fold egg yolks and salt and pepper into egg whites
  4. Heat butter in an ovenproof skillet
  5. Pour in egg mix
  6. Cook over low heat for 10 minutes or until puffed and set on bottom
  7. Bake at 325º F for 10 minutes
  8. While baking, combine butter, cream, water and shredded cheese in saucepan
  9. Stir and heat until smooth
  10. Serve omelet with cheese sauce
