Pineapple Salad Dressing
Suitable for Diabetics as it's high in natural sugars..
Yield: 1 cup of dressing for 2 1/2 cups of fruit
Ingredients
- 1 c. pineapple juice
- 1/2 c. sugar substitute (like Splenda)
- 1 TBS cornstarch
- 1 egg white, beaten until stiff peaks form
- Pinch of salt
- 2 TBS lemon juice
- 1/4 tsp. grated lemon rind
Instructions
- Cook pineapple juice, cornstarch and salt until thickened
- Add sugar and lemon juice and lemon rind
- Fold in stiffly beaten egg white last
- Fat Free Non Dairy Whipped cream can be added if a richer dressing is desired
