Pineapple Salad Dressing

Suitable for Diabetics as it's high in natural sugars..


Yield: 1 cup of dressing for 2 1/2 cups of fruit

Ingredients

  • 1 c. pineapple juice
  • 1/2 c. sugar substitute (like Splenda)
  • 1 TBS cornstarch
  • 1 egg white, beaten until stiff peaks form
  • Pinch of salt
  • 2 TBS lemon juice
  • 1/4 tsp. grated lemon rind

Instructions

  1. Cook pineapple juice, cornstarch and salt until thickened
  2. Add sugar and lemon juice and lemon rind
  3. Fold in stiffly beaten egg white last
  4. Fat Free Non Dairy Whipped cream can be added if a richer dressing is desired
