Pineapple Salad Dressing

Suitable for Diabetics as it's high in natural sugars..

Yield: 1 cup of dressing for 2 1/2 cups of fruit

Ingredients

  • 1 c. pineapple juice
  •   <p>
        <li>
          <div align="left">
            1/2 c. sugar substitute (like Splenda)
          </div>
        </li>
      </p>
    
      <p>
        <li>
          <div align="left">
            1&nbsp;TBS cornstarch
          </div>
        </li>
      </p>
    
      <p>
        <li>
          <div align="left">
            1 egg white, beaten until stiff peaks form
          </div>
        </li>
      </p>
    
      <p>
        <li>
          <div align="left">
            Pinch of salt
          </div>
        </li>
      </p>
    
      <p>
        <li>
          <div align="left">
            2&nbsp;TBS lemon juice
          </div>
        </li>
      </p>
    
      <p>
        <li>
          <div align="left">
            1/4 tsp. grated lemon rind
          </div>
        </li></ul></font>
      </p>
    

    Instructions

    1. Cook pineapple juice, cornstarch and salt until thickened
    2. Add sugar and lemon juice and lemon rind
    3. Fold in stiffly beaten egg white last
    4. Fat Free Non Dairy Whipped cream can be added if a richer dressing is desired
