Orange Streusel Muffins

A tempting change of pace for breakfast.

Yield: Makes 12 muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 cup granulated sugar
  • 3/4 tsp. ground cinnamon
  • 1/2 tsp. allspice
  • 1/2 cup golden raisins
  • 1 egg, beaten
  • 1/2 cup low-fat milk
  • 1/4 cup vegetable oil
  • 1/4 cup orange juice
  • 1 teaspoon grated orange rind
  • 1 teaspoon orange extractTopping

  • 1/4 cup granulated sugar

  • 2 Tbs. butter, softened
  • 1/4 tsp. ground cinnamon
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat oven to 400 degrees F
  2. Combine first six ingredients in a large bowl; make a well in center of mixture
  3. Combine egg and next five ingredients; add to dry mixture and stir just until moistened
  4. Spoon batter into greased muffin tins, filling cups two-thirds full
  5. Combine topping ingredients and mix with a fork until crumbly; sprinkle evenly over muffins
  6. Bake for 18 to 20 minutes or until muffins test done
  7. Remove muffins from pans immediately; serve warm
