Orange Streusel Muffins
A tempting change of pace for breakfast.
Yield: Makes 12 muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 cup granulated sugar
- 3/4 tsp. ground cinnamon
- 1/2 tsp. allspice
- 1/2 cup golden raisins
- 1 egg, beaten
- 1/2 cup low-fat milk
- 1/4 cup vegetable oil
- 1/4 cup orange juice
- 1 teaspoon grated orange rind
1 teaspoon orange extractTopping
1/4 cup granulated sugar
- 2 Tbs. butter, softened
- 1/4 tsp. ground cinnamon
- 1/4 cup all-purpose flour
Instructions
- Preheat oven to 400 degrees F
- Combine first six ingredients in a large bowl; make a well in center of mixture
- Combine egg and next five ingredients; add to dry mixture and stir just until moistened
- Spoon batter into greased muffin tins, filling cups two-thirds full
- Combine topping ingredients and mix with a fork until crumbly; sprinkle evenly over muffins
- Bake for 18 to 20 minutes or until muffins test done
- Remove muffins from pans immediately; serve warm
