Orange Roughy with Lemon Sauce

Fish with a dynamic lemon sauce accent.

Ingredients

  • 2 orange roughy fillets
  • 1/3 cup water
  • 1/4 cup white wine
  • 1 Tbs. each parsley and fresh lemon juice
  • 1/2 tsp. chicken bouillon
  • olive oil

Instructions

  1. Heat oil in skillet
  2. Add fillets and cook over medium high heat turning once, until fish is cooked thoroughly, usually 3-5 minutes on each side
  3. Transfer fish to a platter
  4. To the same skillet add water, wine,parsley, lemon juice, and bouillon
  5. Cook over high heat until mixture comes to a boil; continue to cook until mixture is reduced to about 1/4cup, about 4-5 minutes
  6. Pour over fish and serve
