Onion Garlic Mashed Potatoes

Mashed potatoes rich in flavor make a simple side dish.

Yield: Serves 6


  • 4 medium potatoes
  • 3/4 cup coarsely chopped onion
  • 2 garlic cloves, minced
  • 1 tsp. salt (to taste)
  • Milk (as needed)
  • 1/2 tsp. parsley
  • Black pepper (to taste)


  1. Peel potatoes and cut into 1-inch cubes
  2. Place in saucepan along with onion, enough water to cover, garlic and salt
  3. Bring to boil
  4. Simmer 15 minutes or until potatoes are tender
  5. Drain
  6. Mash potatoes, adding milk and beating to desired consistency
  7. Add parsley and black pepper
  8. Serve hot
