Mock Potato Salad

Satisfy your carb craving with this low-carb option.

Yield: Serves 8

Ingredients

  • 1 head cauliflower, cooked and chopped
  • 2 eggs, boiled and  choppped
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 1/2 cup mayonnaise
  • 1/2 tsp. dry mustard
  • 1/2 tsp. seasoned rice vinegar
  • Salt and pepper to taste
  • Fresh dill, optional
  • Dill pickle, chopped, optional

Instructions

  1. Cook and drain cauliflower
  2. Chop all ingredients as noted
  3. Combine all ingredients in a large bowl
  4. Cover and chill
