Low-carb and delicious macaroons.

Yield: Serves 10


  • 4 egg whites
  • 1 1/4 cup Splenda
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla extract
  • 2 cups unsweetened shredded coconut


  1. Preheat oven to 325F
  2. Beat egg whites until frothy
  3. Stir in sweetener, salt, vanilla, and coconut
  4. Spoon drop onto greased cookie sheet
  5. Bake at 325F about 15 to 20 minutes, or until lightly browned
