Macaroni is cooked in tomatoes with basil, spinach and mushrooms.
2 cups macaroni
28 oz. can peeled tomatoes with basil
2 cups chopped spinach
2 cups sliced mushrooms
2 cups water
1/2 cup sliced green onion
4 tablespoons Parmesan cheese
Place all ingredients except Parmesan cheese into a large shallow pot.
Bring to a boil, reduce heat to a simmer and cook for 5-8 minutes or until macaroni is done and liquid is evaporated.
Serve 1 tablespoon parmesan cheese each portion.
