Luau Pork

Yield: Serves 4

Ingredients

  • 4 (4 oz.) lean pork tenderloins or cutlets
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 cup crushed pineapple, packed in fruit juice. undrained
  • 2/3 cup water
  • 1/2 tsp. ground ginger
  • 2 cups Pepperidge Farm dried bread cubes
  • 2 Tbs. apricot spreadable fruit
  • Cooking spray

Instructions

  1.  Preheat oven to 350 degrees F
  2. Spray an 8-inch square baking dish with cooking spray
  3. In a large skillet sprayed with cooking spray, lightly brown meat on both sides
  4. Remove meat from skillet
  5. Add onion and green pepper to skillet
  6. Saute until vegetables are crisp and tender, 3 to 4 minutes
  7. Stir in undrained pineapple, water, and ginger
  8. Add bread cubes
  9. Mix well to combine
  10. Spoon bread mixture into prepared baking dish
  11. Arrange browned meat evenly over bread mixture
  12. Spread about 1 1/2 teaspoons spreadable fruit over each piece of meat
  13. Cover with aluminum foil and bake 30 minutes
  14. Uncover and continue baking 10 minutes
  15. Place baking dish on a wire rack and let set 2 to 3 minutes
