Lemon Coffee Cake

Yield: Serves 15

Ingredients

  • 1 package lemon dessert mix
  • 1/2 cup butter, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt

 Crumb Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup cold butter
  • 1 tsp. ground cinnamon
  • 1/2 cup chopped nuts

Instructions

  1. Preheat oven to 350 degrees F
  2. Prepare lemon dessert mix according to recipe on label; cool
  3. Combine next six ingredients in a bowl
  4. Sift together the flour, baking powder and salt
  5. Stir into vanilla mixture
  6. Spread half the dough in a greased and floured 13 x 9-inch baking pan
  7. Spread lemon dessert mix over dough
  8. Top with remaining dough
  9. With pastry blender, work remaining ingredients until mixture resembles crumbs
  10. Sprinkle crumb topping over dough layer
  11. Bake for 45 minutes or until topping is golden
  12. Cool to room temperature or chill, if desired
