Indonesian Chicken

The marinade makes this chicken so special.

Yield: Serves 4


  • 1/4 cup green onion, sliced thin
  • 1 garlic clove, minced
  • 1 lime
  • 1 orange
  • 2 Tbs. soy sauce
  • 1/2 tsp. crushed red pepper
  • 1/2 tsp. ground cumin
  • 4 chicken breast halves
  • 1 tsp. cornstarch
  • 1 Tbs. fresh cilantro for garnish


  1. Spray skillet with cooking spray
  2. Add onion and garlic and cook 2-3 minutes
  3. Transfer to large bowl
  4. Grate peel and squeeze juice from both the lime and the orange
  5. Set aside orange juice
  6. Add all peel and lime juice to bowl with green onion; stir in soy, pepper and cumin
  7. Cut chicken into strips; add to soy mix and coat; cover and marinate 15 min
  8. Remove chicken from marinade
  9. Reserve marinade
  10. Spray skillet with cooking spray
  11. Add chicken and cook
  12. In small bowl, mix cornstarch and orange juice
  13. Add to skillet with reserved marinade
  14. Cook until mix thickens
  15. Boil 1 minute
  16. Return chicken to skillet
  17. Heat through and serve
