This recipe for healthy chili can be made with either lean beef or ground turkey.
Yield: 6 to 8 Servings
- 1 large onion, chopped
- 3 toes of garlic, minced
- 1 tablespoon of olive oil
- 3/4 cup lean ground beef or 1 cup of ground turkey
- 1 1/2 teaspoon chili
- 1 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1 can black beans
- 1 can kidney beans
- 1 can cannellini or other white beans
- 1 large can stewed whole stewed tomatoes (roughly 2 cups)
In a large pot, cook the onion and garlic in the olive oil, stirring constantly, until the onion turns clear.
Add the ground meat, chili, cumin and salt. If you are using ground turkey, you may also need to add a little more oil to prevent the meat from sticking to the pot. Cook until the meat is browned.
Drain the beans and add them. Add the tomatoes, with the juice. Stir thoroughly. Simmer for 30 to 60 minutes. Add more seasonings to taste.
