Ham and Cheese Omelet

A classic omelet favorite the low-carb way.

Per Serving: 250 caloreis, 34.5 g protein, 10.5 g fat, 1.5 g carbohydrates, 349.5 mg cholesterol, 714 mg sodium
Yield: Serves 2

Ingredients

  • 3 whole eggs
  • 3 egg whites
  • 2 Tbs. water
  • 3 slices extra-lean ham
  • 3 slices reduced-fat Swiss cheese
  • Chopped chives or thinly sliced scallions

Instructions

  1. Beat eggs and egg whites with water in a medium bowl until blended.
  2. Spray a large nonstick skillet with nonstick cooking spray; heat over medium heat.
  3. Add eggs and cook over medium heat until bottom is set, gently pushing edges of omelet towards center to allow uncooked eggs to flow underneath.
  4. Place ham and cheese slices on one half of omelet. Fold other half over top.
  5. Remove from heat and let stand 1 minute or until cheese melts. Cut in half to serve and sprinkle with chopped chives if desired.

The carb count is wrong on this recipe.....eggs have 0.6 carbs each....multiply that times 6 and its 3.6and then add all the other carbs. It still is a great low carb meal though!

"A classic omelet favorite the low-carb way"? Stop me if I'm missing something here, but is there any other to prepare "a calssic omelet" EXCEPT low-carb?!
