Grilled Balsamic Vegetables

Add a savory flavor to a simple batch of grilled summer vegetables.

Yield: Serves 4

Ingredients

  • 1 yellow bell pepper, quartered and cleaned
  • 1 red bell pepper, quartered and cleaned
  • 1 medium zucchini, quartered
  • 1 medium yellow squash, quartered
  • 24 asparagus spears
  • 1 lemon, halved and juiced
  • 2 Tbsp. extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • Kosher salt and cracked black pepper to taste

Instructions

  1. Clean and chop all vegetables.
  2. Place in a large mixing bowl and add remaining ingredients.
  3. Toss vegetables in balsamic mixture coating everything well. Then place on a medium-high propane or charcoal grill about 7-10 minutes.

I was in the same boat with the back, heart and now being diagnosed with type 11 diabetes. I decided to go back on the low carb diet which is the only one that has every worked for me in my life.

Caught this site while seeking a low calorie sweet and sour mix for whiskey sours. Glad I did and will keep up with the newsletters, but not too many partner information please.

Eating Carbs I have seen the Biggest Loser Show and the results from your amazing work. I have gone thru alot in the past year,ear and Neck surgery, loss my mother, recieving epidurals for my continuous back pain and NOW have gained TEN plus pounds back from those injections and having a very difficult time loosing it. Up til my mother's health rapidly was declining I was attending Weight Watchers and successfully took off 28 lbs. Now seeing my scale going up I am getting very depressed due to the fact I am limited with any form of activity at this time, and I guess due from boredom / depression / steroids; I want to eat everything in site. I read your article in Woman's World Magazine, plan on getting your book "The Skinny Rules"...I need your help / advice on how to take that first step on getting my LIFE back. I can only continue to PRAY that I will recieve your help in some form.... Thank You and May God Bless You, Lynda
