Greek Swordfish
Mediterranean puts its on mark on this swordfish recipe.
Yield: Serves 4
Ingredients
- 4 swordfish steaks
- Juice of one lemon
- 1- 8 oz. can Italian-style stewed tomatoes
- 1 cup feta cheese, crumbled
- 2 Tbs. olives, sliced
Instructions
- Preheat broiler; pour lemon juice over steaks
- Place on rack in broiling pan on top rack
- Broil 4 min each side or until fish is opaque throughout
- Meanwhile, heat stewed tomatoes to boiling over medium-high heat; boil 5 minutes until mix is slightly thickened
- Spoon stewed tomatoes onto 4 dinner plates, place swordfish on top, sprinkle with cheese and olives
