Greek Chicken

Chicken dressed up with all the elements of a Greek dish.

Yield: Serves 4


  • 1 lb. boneless chicken
  • 1 cup crumbled feta cheese
  • 1/2 tsp. dried oregano
  • 1 Tbs. lemon juice
  • 1 Tbs. olive oil
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1/2 cup tomato diced
  • 1 cup fresh spinach


  1. Flatten chicken
  2. Combine feta, lemon juice and oregano
  3. Spread over chicken
  4. Fold chicken to enclose filling; secure with a toothpick
  5. Heat oil in a skillet until hot
  6. Add chicken and cook until golden brown
  7. Mix chicken broth, tomato and spinach
  8. Add to skillet, heat to boiling
  9. Reduce heat to low; cover and simmer 8-10 minutes
  10. Serve
