Goat Cheese with Spinach and Sundried Tomatoes

A flavorful combination for a great salad.

Nutrition Facts: Carbohydrates 1.1g
Yield: Serves 4


  • 1 cup romaine lettuce
  • 1/2 cup spinach
  • 1 radish, diced
  • 4 Tbs. sundried tomatoes
  • 3 Tbs. olive oil
  • 1 Tbs. balsamic vinegar
  • 1/2 lb. goat cheese


  1. Slice goat cheese with oil and broil until golden
  2. Toss romaine, spinach, radish, and tomatoes
  3. Place goat cheese on top of salad
  4. Drizzle oil and vinegar over all
