Garlicky Meatballs over Rice

A hearty family favorite.

Yield: Serves 4


  • 3/4 lb. extra-lean ground beef
  • 1 slice whole wheat bread, crumbled
  • 1/4 cup salsa
  • 4 cloves garlic, finely chopped
  • 2- 8 ounce cans tomato sauce
  • 3 cups hot cooked rice


  1. Mix all ingredients except tomato sauce and rice
  2. Shape into sixteen 1 1/2-inch meatballs
  3. Spray 10-inch nonstick skillet with nonstick cooking spray
  4. Heat over medium-high heat
  5. Place meatballs in skillet
  6. Spray meatballs with nonstick cooking spray
  7. Cook until meatballs are brown on all sides
  8. Stir in tomato sauce
  9. Heat to boiling then reduce heat to low
  10. Cover and simmer about 20 minutes, stirring occasionally until meatballs are no longer pink in center\
  11. Serve over rice
