Fried Cheesy Tomatoes

Tomatoes that are not quite ripe are perfect for this delicious recipe.
4 unripe medium tomatoes
1/2 cup fat free cracker crumbs
4 Tbsp parmesan cheese
Mix the crumbs and cheese in a bowl. Slice the tomatoes. If they are not very juicy then dampen each slice with water. Dip each slice in the crumb mixture and pan-fry in a nonstick pan, using vegetable oil cooking spray, over medium-high heat until golden brown on each side.
