Feta Stuffed Chicken Burger

A chicken burger original with Mediterranean influence.

Yield: Serves 4

Ingredients

  • 16 oz. ground chicken
  • 1 Tbs. fresh thyme, stalk removed
  • 1 clove garlic, crushed
  • 3.5 oz. feta cheese, reduced-fat, crumbled
  • 4 medium pita bread or 4 whole-grain buns*
  • 4 small leaf lettuce, romaine
  • 2/3 C roasted red peppers (no oil)
  • 5 black olives, in brine, sliced

Instructions

  1. Preheat the grill to medium
  2. Mix together chicken, thyme, garlic and feta in a bowl
  3. Divide mixture into four balls and then press them gently into patties
  4. Grill the burgers for 5-7 minutes on each side until golden and cooked through in the middle
  5. Warm the pita or buns under the grill and serve each with a burger, lettuce, peppers and olives

NOTE: You can use any herb to flavor these burgers; try fresh oregano, parsley or sage. Dried herbs can be used instead, but remember the flavor is stronger, so use only 1-2 tsp.

This recipe is delicious. I used dried herbs b/c no fresh on hand and adjusted the measurements accordingly. I will definitely make this again. The feta cheese gives this a salty tang so I did not use salt at all. Two forks up !
