Feta Spinach Salad

Feta cheese makes this salad happy.

Yield: Serves 4


  • 2 Tbs. olive oil
  • 1 medium red pepper, cut into strips
  • 3 Tbs. white vinegar
  • black pepper
  • 1 Tbs. olive oil
  • 1/2 tsp. salt
  • 1 cup fresh spinach
  • 8 oz. feta cheese, crumbled


  1. Heat olive oil over medium high heat
  2. Add red peppers and cook until tender
  3. Remove
  4. Mix vinegar, pepper, 1 Tbs. oil and 1/2 tsp. salt
  5. Add vinegar to spinach and red peppers
  6. Sprinkle feta cheese over all
