Easy Garden Bake

A cheesy wonderful bak with the right touch of veggies.

Nutrition Facts: Calories 90, Fat 2g, Fiber 1g, Saturated Fat 1g, Cholesterol 5mg, Sodium 440mg, Carbohydrates 13g, Protein 6g

Yield: Serves 6

Ingredients

  • 1 cup chopped zucchini
  • 1 large tomato, chopped (1 cup)
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup reduced fat Bisquick
  • 1 cup fat-free milk
  • 1/2 cup Egg Beaters
  • Salt and pepper to taste

Instructions

  1. Heat oven to 400 degrees F
  2. Grease 9-inch pie plate
  3. Layer zucchini, tomato, onion and cheese in pie plate
  4. Stir remaining ingredients until blended, then pour out into pie plate
  5. Bake about 35 minutes or until knife inserted in center comes out clean
  6. Cool 5 minutes
